 1 pizza base
 aubergines, thinly sliced
 1 red onion, chopped
 1 tomato, diced
 ¼ cup spinach leaves
 1 handful basil leaves, torn
 2 handfuls mozzarella cheese, grated
 juice of one lemon
 55 g tomato paste/pizza sauce
 basil pesto
 salt & pepper

Preheat oven to 210 degrees, or as hot as you can.

Mix a teaspoon of Moringa into your basil pesto.

Grease a pizza tray.

Top pizza base with a thin layer of tomato paste or pizza sauce, aubergines, red onion, spinach leaves and mozzarella.

Dot over dollops of moringa pesto.

Cook in the oven for 15-20 minutes.

Top cooked pizza with fresh tomato, basil leaves and more pesto if desired.
