Moringa Breakfast Fritata

You really can’t beat a good protein breakfast to set you up for the whole day. With our Moringa, Mushroom & Spinach Frittata, you have all the protein and vitamins to make the most out of your day.

Ingredients
  

  • 3 tbsp extra virgin olive oil
  • 6 large eggs
  • 3 large egg whites
  • 250 g Button Mushrooms Sliced
  • 1/4 cup goat cheese
  • 1 handful baby spinach
  • 1 tbsp Moringa Powder
  • Salt and pepper

Instructions
 

  • Preheat oven to 180°C. In a cast iron or ovenproof pan, add 1 Tbsp (15 ml) olive oil. Add mushrooms, and fry until soft.
  • Meanwhile, whisk eggs, egg whites and Moringa Powder together, and set aside. Add remaining 2 Tbsp (30 ml) olive oil, add spinach and season with salt and pepper to taste. Add whisked eggs and cook in pre-heated about 15 minutes, or until set. Place under the grill for about two minutes more to brown slightly. Top with goats cheese and enjoy.
